A Veritas Life Adventures 2015 Outlook By Grant Boatwright, ED Veritas Life Adventures

What is it with our fascination with sagas? Those soul inspiring epic tales that awaken fears, passions, sorrow, and triumph. Those adventures that seem so impossible and unfathomable, to dark to overcome, and just when they are darkest, break, and the light shines through to a glorious new day, victorious, and full of new opportunity. Whether it is Aragorn standing defiant against overwhelming orc hordes with his companions in The Lord of the Rings, Luke taking that epic shot as he exhales deeply in the final moment of the Episode IV of the Star Wars Saga, or even a simple buzzer sounding that ignites a nation after ‘The Miracle’ hockey match in 1980; the fact is buried within. Our souls yearn for something great to be a part of, a story to play a part in, an adventure to be caught in. This yearning, which has spawned so many a great story, must originate from somewhere or someone. It is that greatest of stories, which began in paradise, in communion with the Creator of all things, a fall from His design, a long history trying to recover it, a sacrifice by His Son for us all, and this Son, Jesus, taking us all out of the darkness and shedding a light on the journey back, is the one resonating and calling to us still.

We, at Veritas Life Adventures, believe wholeheartedly in the reality of this yearning, the need to discover what it means, Who is whispering it to us, and how it plays out in our everyday lives. However, like all great stories, it must grow, struggle, and change because only through change will we improve and see the new dawn that is coming.

 

Reaping the harvest and planting the new seed

The start of 2015 finds Veritas Life Adventures wrapping up its last semester with a group of young Seekers, now seasoned, that are the culmination of our program initiation that began in the spring of 2012. One has been with us since the beginning, Conner Jansen, the others (Jathan Gupton, Erik Lavespere, and Tereza Bacca) have joined us along the way; but all are seniors in high school this year, ready to finish strong with the choice they made to journey along side us, and find a path that will continue seeking the truth in all aspects of their lives.

This presented us with a dilemma; if we start the program in January, what happens to the seekers who graduate in May and go off to their next stage of life, be it college or other, and still have half a year to go in the program? What about future Seekers who will be seniors in their high school careers?

That is why we are growing and changing to better serve our Seekers, and their resolution to be a part of this program, by finishing up with our current group of Seekers in July 2015 and starting all future years of the Veritas Life Adventures program on September 1, to go along with the school calendar.

We feel this will give both the current Seekers the best chance at finishing the program in the strongest fashion, honing and applying those skills they have learned thus far, while giving prospective Seekers for the new Veritas program starting in September a chance to fully commit, see how the program works, and begin and end with the other stages of life they are currently in. Therefore, go, find out more about the program, see what we are currently doing, and decide to seek that which is worth the struggle finding.

 

Their sagas continues, growing and strong

I confess I am writing this with a slight agenda… I want to boast a bit in the changes and triumphs I have seen Christ accomplishing in the lives of our seekers, encourage them in the work yet unfinished through them, and invite those new young Seekers (or parents of them) to make the choice to see if they ready for an adventure such as this.

All the Seekers who have come through the program, those still in and those who have left, have been transformed by Christ in some way; whether they want to admit it or not. Seeds for future success and a full life have been sown. But for these four (interesting that is how many went on our first trip to Red River in 2012), truly epic stories and accomplishments have been seen and are still being formed. While most of their stories are similar in their infancy with Veritas, as I will tell using Conner, and each has too numerous achievements to expound upon here, I would like to give you some highlights and share how they plan to take it to the next level.

Conner, an original 2012 Veritas Seeker, began an apathetic typical teenage gamer and who, like so many others, had multitudes of gifts, dreams, and passions just waiting to be awakened. Now he stands, a beast of a young man, poised to go to UTD to pursue a long time, but now fully enlivened, passion for audiology (as he is an award winning signer). He was a regional finalist for the Posse scholarship in Houston, a leader and active member in his church, Parkway United Methodist, and an active participant in the Insanity: Max30 program, along with Shakeology user, to help maintain a healthy physical lifestyle (literally see his physical transformation in our albums on Facebook).

Jathan, who has taken his talents in music to encourage those as a worship leader at Parkway and started workout sessions on his own with those in his community BEFORE SCHOOL…as a teenager!

Erik, who conceptualized, started, and seen manifest his own Ultimate Frisbee Club at his high school who just recently had their first inter school match with another local high school.

And dear Tessa, who in just her first year, has struggled and overcome so many personal trials (summiting Wheeler Peak on an injured hip and ankle), and pushing through strong spiritual questions to find Christ waiting with open arms, accepting Him, and ready to see what the next adventures bring.

And this year all four will be coming together to put on their own Veritas Intensives, where they will find, bring, and share with new prospective Seekers all they have learned in the program thus far. They will be planning the two day intensive all themselves: the nutritional meal made together, the workouts, the program/service project, and the journal topics discussed; so stay tuned, with much anticipation, to see what comes next.

Lose Weight Through Meditation

What you think about you care about, and what you care about you will pursue. In that same line, what you think about has an enormous effect on how you look. A 2008 psychological study linked depression with obesity. As someone famously said, “People who are obese have a lot of tears they haven’t cried.”

There’s also extensive evidence to prove that your diet directly effects your mood. Not to mention the health of your soul impacts both your physical and mental health. Blood sugar, fat, and sodium all have a bearing on how you feel physically and emotionally.

During the beginning of every year huge swaths of people decide to lose weight. This is the year they’re going to get it right. Lose those extra pounds and change their lives. Yet an overwhelming majority of them fail to keep their resolutions. Are people just lazy beyond belief? No.

You are a whole being.

                        I believe the reason so many people fail to reach their weight loss goals is because they fail to see they are holistic beings. What we eat, our activity level, our time spent in meditation, working through our own insecurities, and being emotionally present all play a role into our weight. This is why if your goal is to lose weight it’s vital to understand that what you’re actually saying is your goal is to be holistically healthy.

This is the reason why when people say something to the extent of, “I’m going to work on my spiritual life,”they lose sight of who they are. You can’t separate soul, from the body, or emotion from the soul. Every part of who we are is intimately connected with the other parts. If you sprain your ankle it effects how the rest of your body is able to function.

Now if one part of who you are gets healthy when it’s been neglected it does make the other parts somewhat more healthy too. I’ve talked with many people who lose an incredible amount of weight after they’ve seen a counselor for an extended period of time. I also have several friends who have found that God speaks to them on long runs through the woods. The problem is if we just address one or two areas of our lives and neglect all of who we are our gains can be short lived.

Taking a holistic approach to life.

                        We all have personal goals for academics, careers, and our personal lives. A great first step to accomplishing those goals is to become healthy. My wife and I have declared 2015 our year to become healthy. We have weight goals, but we also have goals for our emotional and spiritual well being. I’ve begun making meditation a key part of my weekly routine alongside improving my diet, regular exercise, and working through my own emotional baggage with several close friends.

Less than two months into the new year I’ve lost 8 pounds, my business has already doubled our sales for all of 2014, and I feel more peaceful than I’ve felt in years. I’ve decided that it’s more valuable to become fully healthy over the full course of 2015 than work really hard in 1 specific area (such as changing my diet or exercise habits) in order to achieve quick temporary gains.

You are a fully integrated mind, body, and soul. Take the time to nurture the health of each part of who you are. It’s the only way to achieve lasting change, and reach the goals you’ve set for yourself.

One Trip To Rule Them All

How else could we possibly title our trip to New Zealand, the land of Misty Mountains, hobbits and dragons?? It was indeed the trip to rule all trips, complete with Lord of the Rings sword "fights" and death-defying leaps off of bridges! Our first overseas Veritas trip was one for the books, and none of us will forget our adventures, even to our eleventy-first birthdays! Rather than drone on about how great this trip was, I am going to move aside and let the Seekers do the talking. After all, they are the very reason we made this trek, and it was their adventure foremost (but make no mistake, the four adults enjoyed the adventures [and the food ;)], too!). Erik- "Our group traveled to Milford Sound where we explored New Zealand’s fjords by boat. My favorite sight on the tour was when we saw the streams of water falling down the mountain sides. Since the mountains were partly covered by clouds, it appeared like the water was flowing down from heaven. It was simply awe inspiring and almost looked unreal, like a scene from a sci-fi movie..."

Grant's blurb: As you read, the seekers all had various experiences, trials, and lessons learned: from the deep to the surface, from fear to exhilaration, and we hope you enjoyed sharing in them. We are so proud of all the dedication and work the Seekers have put forward in the program, be it their first year or third.  We have seen them come so far in their leadership both in the program and in their community.  If any group of young adults put forth the effort and earned this trip, it is these five.  We had an amazing time digging deeper into who we are as women and men created by God to play unique roles in every aspect of our lives.  Thank you to all those who helped make this trip possible and to the Seeker's continued application of Veritas' mission and vision in their lives.  I know they will share all they have gained spiritually, physically, and nutritionally with those in and around their sphere of influence  for years to come.  May the Lord bless you all, keep you, and thank you for making this breathtaking trip a reality!  Please feel free peruse our photos below and to check out our Facebook page for additional photos on the trip in the near future.

Seeker thoughts...Forging 2014 edition

Earning the name "Forging" by Erik Lavespere After hours of hiking and soul searching, this trip has definitely earned its name " The Forging Trip".

Seekers have an amazing mindset of being optimistic and perseverant. We've pushed ourselves on all our hiking trips, but on this trip, we had to dig deep. On our first day, we climbed 80+ switchbacks to reach our campsite. On the following day, we hiked 11 miles and crossed multiple ridges. After an exhausting day of hiking, we jumped into the freezing water of Echo Lake to revive ourselves.  The hikes were tough, but the picturesque scenery provided the ultimate distraction. We were looking at everything around us. Instead of focusing on our aching feet, we enjoyed the redwood trees, the pristine mountainous landscapes and the remote lakes. It was rewarding to see these sights firsthand.

The physical isn't the only thing we "forged" on this trip. We discussed spiritual matters like God's role in personal relationships, the significance and existence of heaven/hell and the importance of allowing God into our lives so that He may help us understand His word more fully. This trip overall has led me to realize that God is "forging" me in the right direction through the gifts he has provided me--from the Ultimate Frisbee Club to Veritas, Boy Scouts, making new friends, and choosing a career path.

I loved this trip to The Redwoods of Northern California and I hope to do it again one day.

The little things by Jathan Gupton

This last Veritas adventure to California was definitely out of this world. I never thought a state had so many settings, from a cold dark blue Pacific ocean and giant green redwood forests, the rocky Trinity Alps, to the amazing city of San Francisco. In a mystical way I feel as if these changing settings reflect me. School is like the cold sea with changing tides from smooth to rough, depending on if a test is coming up. Church is a gigantic redwood keeping my soul rooted to what I believe in. The mountains represent all the problems that come my way; I have to keep moving and overcome those things. Our leisure time in San Francisco mirrors my social life combined with work. Having these major things in life, like school, church, and work are great, but sometimes I feel that we should break life down and remember what it felt like to be five years old. I’m not talking about temper tantrums; I'm talking about getting excited over the little things that I should enjoy everyday in life.

I strongly believe in taking time to enjoy the little things in life, such as warm blankets fresh from the dryer, waking up before your alarm rings and realizing you can go back to sleep, smelling a fresh batch of Grandma’s chocolate chip cookies, or drinking coffee (the wonderful nectar that could only have been created by God) with a close friend. Enjoying the little things may seem insignificant to some, but they make me realize I must cherish everything before my life inevitably changes. Whether it be my last year of high school, my first year of college, my family, my friends, or my friends who are practically family, I plan to cherish all the people and experiences of my life for as long as possible.

We are in the third week of school and already I find myself in a frenzied schedule between school, work, church and family duties. However, I still take time to sit down and share a meal with my mom, or play a game with my little brother. My neighbors are some of my closest friends, so I make time to share a workout with them or just hang out together. I keep a positive outlook on life and don’t want to miss any opportunities that come my way.

Losing my grandfather when I was nine and my eighteen-year-old cousin when I was ten made me realize just how short our time is here on earth. The impacts of that experience influenced my views and lead me to value seeking joy in every experience, however small; and more especially, seeking out the little things that satisfies and rejuvenates my soul. The little things among this California trip helped me pause from life, enjoy a spiritual hike, and soak up beautiful nature with close friends.

Thinking of ordering Papa John's or throwing in a frozen DiGiornio tonight? Give this healthier naan version a try instead! You can make your own pizza with fresh ingredients. Plus, these are very easy to customize, so everyone can have the toppings they personally prefer! Start with a piece of naan* per person and go from there!

*You can usually find these in the bakery section of the grocery store. I like garlic naan.

What you'll need:

  • 1 piece naan per person/pizza
  • 1/4 cup spaghetti sauce (or pesto) per pizza
  • 1/4 cup mozzarella cheese per pizza
  • chopped bell pepper
  • sliced fresh mushrooms
  • arugula or spinach leaves
  • sliced black olives
  • ground turkey
  • onion and garlic
  • 1 tbsp extra virgin olive oil
  • seasonings of your choice

Other toppings options:

-sliced turkey sausage

-pineapple

-chicken

-onions

-jalapeños

-other cheeses

Possibilities are endless! Get creative!

Step 1: Preheat your oven to 350 degrees. Wash, chop and slice your veggies and set out your cheese.

Step 2: Heat the olive oil in a skillet on medium heat. Add sliced onion and minced garlic and stir, cooking for a few minutes until the onion is clear.

Step 3: Add a package of ground turkey to the skillet, breaking up the meat into small bits. Season with salt, pepper and red garlic flakes if you want a little spice. If you don't have garlic on hand, season the meat with garlic powder now. Stir occasionally.

Step 4: Once the turkey is completely cooked, with no pink left, turn the heat down to low & add 1-2 cups spaghetti sauce & mix together. Heat until sauce is warm while you build your pizzas.

Step 5: Place the pieces of naan on cookie sheets. Using a kitchen brush or spatula, spread sauce liberally on each pizza. Sprinkle cheese and layer your topping. Bake your pizza for about 15 minutes-- a few minutes longer if you want a little more crunch. Let sit for a minute to set and enjoy with a salad like this one:
